Cheese is a big topic in the Valle Aurina: A festival is dedicated entirely to the “Graukäse”, which comes from the valley
A South Tyrolean quality product and a variety of South Tyrolean mountain cheese is called "Ahrntaler Graukäse" (Valle Aurina Grey Cheese): Its colour is whitish-yellow, its consistency is grainy and its taste is spicy-sour and pungent the longer it matures. It is known for its low fat content, which is just 2%. It is often enjoyed with fresh onion rings, vinegar and farmhouse bread. This delicacy is celebrated in the Valle Aurina around Cadipietra (Steinhaus) for one week in September. The various grey cheese producers present themselves and offer their products.
During the "Graukäse" Cheese Days, you can look forward to a cheese and farmers' market, tastings, live music, the award ceremony for the best grey cheese of the valley and the traditional GrauKäseFestival with a 5-course menu. Moreover, the farm cheese dairies, some of which are located at considerable altitudes, open their doors for a guided tour. Another festival dedicated entirely to cheese is the Campo Tures Cheese Festival which takes place a few months before.
