At the Römerhof farm, the Giovanett family grows an old type of corn that 50 years ago used to be known as "Tirggplent" in the South Tyrolean Bassa Atesina. The typical orange-red ears of corn are milled into four different types of gluten-free flour in the farm stone mill involving a series of traditional steps.
